  • 12 oz twisted pasta (gemelli or cavatappi)
  • 4 oz Velveeta, cubed
  • 1 cup shredded mozzarella
  • 1/2 cup shredded cheddar
  • 1/2 cup grated Parmesan
  • 4 oz cream cheese, cubed
  • 1 1/2 cups heavy cream
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the twisted pasta: Bring a large pot of salted water to a boil. Cook the twisted pasta until tender but still slightly firm. Reserve 1 cup of pasta water before draining. Set pasta aside.
  2. Sear the chicken: Season chicken with Cajun seasoning, smoked paprika, salt, and pepper. Sear in butter over medium-high heat until golden and cooked through. Add garlic in the last minute.
  3. Prepare the sauce: In the same skillet, melt butter, add garlic, pour in heavy cream, and stir in Cajun seasoning. Simmer until slightly thickened. Add Velveeta and cream cheese, then the other cheeses, stirring until smooth.
  4. Combine and serve: Toss cooked pasta in the cheese sauce until coated. Adjust consistency with reserved pasta water if needed. Serve the creamy pasta topped with Cajun garlic butter chicken. Garnish with fresh parsley.
