For the watermelon steaks:

- 1 tbsp olive oil
- 1 tbsp honey
- Pinch of salt

- 1/2 cup balsamic vinegar
- 2 tbsp fig jam
- 1 tbsp honey
- 1 tsp lemon juice

- 1/3 cup chopped pistachios or walnuts (optional)
- Extra olive oil drizzle
Instructions
- Slice watermelon into thick steak-like slabs (about 2–3 cm thick) and pat dry.
- Preheat grill or grill pan to high heat and grill watermelon for 2–3 minutes per side until caramelized with grill marks.
- Mix goat cheese with olive oil, honey, and salt. Warm slightly until soft and creamy.
- Combine balsamic vinegar, fig jam, honey, and lemon juice in a saucepan. Simmer over low heat for 5–7 minutes until thickened into a glossy reduction.
- Plate grilled watermelon steaks and spoon warm goat cheese over the top.
- Drizzle with fig balsamic reduction.
- Garnish with fresh mint, nuts, and a light drizzle of olive oil.
- Serve immediately while warm and juicy.
