  • 1/3 cup chopped pistachios or walnuts (optional)
  • Extra olive oil drizzle

Instructions

  1. Slice watermelon into thick steak-like slabs (about 2–3 cm thick) and pat dry.
  2. Brush with olive oil and season with smoked paprika, salt, and black pepper.

  3. Preheat grill or grill pan to high heat and grill watermelon for 2–3 minutes per side until caramelized with grill marks.
  4. Mix goat cheese with olive oil, honey, and salt. Warm slightly until soft and creamy.
  5. Combine balsamic vinegar, fig jam, honey, and lemon juice in a saucepan. Simmer over low heat for 5–7 minutes until thickened into a glossy reduction.
  6. Plate grilled watermelon steaks and spoon warm goat cheese over the top.
  7. Drizzle with fig balsamic reduction.
