Description

Ingredients

  • 1 lb beef stew meat, cut into small pieces

  • 1 tbsp olive oil

  • 1 onion, chopped

  • 2 carrots, sliced

  • 2 celery stalks, sliced

  • 3 cloves garlic, minced

  • 6 cups beef broth

  • 1/2 cup pearl barley

  • 1 tsp dried thyme

  • 1 bay leaf

  • Salt and pepper to taste


Instructions

  • In a large pot, heat olive oil over medium-high heat. Brown the beef on all sides.

  • Add chopped onion, carrots, celery, and garlic. Sauté until vegetables are softened, about 5–7 minutes.

  • Pour in beef broth and add pearl barley, thyme, and bay leaf. Stir well.

  • Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 45–60 minutes, until beef and barley are tender.

  • Season with salt and pepper to taste. Discard the bay leaf.

  • Serve hot with crusty bread or crackers.

Notes

  • For extra flavor, deglaze the pot with a splash of red wine before adding the broth.
