Ingredients

1 lb beef stew meat, cut into small pieces

1 tbsp olive oil

1 onion, chopped

2 carrots, sliced

2 celery stalks, sliced

3 cloves garlic, minced

6 cups beef broth

1/2 cup pearl barley

1 tsp dried thyme

1 bay leaf

Salt and pepper to taste
Instructions

In a large pot, heat olive oil over medium-high heat. Brown the beef on all sides.

Add chopped onion, carrots, celery, and garlic. Sauté until vegetables are softened, about 5–7 minutes.

Pour in beef broth and add pearl barley, thyme, and bay leaf. Stir well.

Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 45–60 minutes, until beef and barley are tender.

Season with salt and pepper to taste. Discard the bay leaf.
