4 large russet potatoes, peeled and cubed
• 1/2 lb turkey bacon, chopped
• 1 small onion, finely chopped
• 1 cup cheddar cheese, shredded
• 1/2 lb beef sausage (breakfast or Italian), crumbled
1/4 cup sour cream
2 tablespoons butter
1/4 cup milk
• Salt and pepper, to taste
1 tablespoon fresh parsley, chopped (for garnish)
1/2 cup breadcrumbs (optional, for topping)


Instructions

  • Prepare Potatoes:
    Boil potatoes in salted water for 15–20 minutes or until tender.
    Drain and mash with sour cream, butter, milk, salt, and pepper until smooth. Set aside.

  • Cook Meats and Onion:
    In a skillet, cook turkey bacon until crispy. Remove and set aside.
    In the same skillet, cook crumbled beef sausage until browned.
    Add chopped onion and sauté until softened.

  • Assemble the Loaf:
    Preheat oven to 375°F (190°C).
    Grease a loaf pan and layer half of the mashed potatoes on the bottom.
    Add a layer of cooked turkey bacon, beef sausage, and shredded cheddar cheese.
    Top with remaining mashed potatoes and smooth the surface.

  • Add Toppings and Bake:
    Sprinkle breadcrumbs over the top if using.
    Bake for 20–25 minutes or until heated through and golden on top.

  • Garnish and Serve:
    Let rest for 5–10 minutes before slicing. Garnish with chopped parsley and serve warm.
