  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp olive oil + 1 tbsp butter

For the Pasta:

  • 14 oz penne
  • 4 tbsp unsalted butter
  • 5 cloves garlic, minced
  • 1 1/4 cups heavy cream
  • 4 oz cream cheese, softened
  • 1 cup grated Parmesan
  • 1 cup shredded mozzarella
  • 2 cups baby spinach
  • 1/2 cup sun-dried tomatoes, sliced
  • 1 tsp Italian seasoning
  • 2 tbsp fresh basil, chopped

Instructions

  1. Cook the Penne: Cook penne in salted water until al dente. Reserve 1 cup pasta water and drain.
  2. Season and Cook the Chicken: Season chicken with oregano, basil, garlic powder, salt, and pepper. Sear chicken in olive oil and butter until golden and cooked through. Remove and rest.
  3. Prepare the Sauce: In the same pan, cook butter and garlic, then add heavy cream and cream cheese. Stir until smooth. Add Parmesan and mozzarella, stirring until glossy.
  4. Finish the Dish: Stir in spinach, sun-dried tomatoes, and Italian seasoning. Toss in penne until coated. Top with sliced chicken and fresh basil.
