For the Chicken:
- 1 1/4 lb boneless skinless chicken breasts, sliced thin
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp olive oil + 1 tbsp butter
For the Pasta:
- 14 oz penne
- 4 tbsp unsalted butter
- 5 cloves garlic, minced
- 1 1/4 cups heavy cream
- 4 oz cream cheese, softened
- 1 cup grated Parmesan
- 1 cup shredded mozzarella
- 2 cups baby spinach
- 1/2 cup sun-dried tomatoes, sliced
- 1 tsp Italian seasoning
- 2 tbsp fresh basil, chopped
Instructions
- Cook the Penne: Cook penne in salted water until al dente. Reserve 1 cup pasta water and drain.
- Season and Cook the Chicken: Season chicken with oregano, basil, garlic powder, salt, and pepper. Sear chicken in olive oil and butter until golden and cooked through. Remove and rest.
- Prepare the Sauce: In the same pan, cook butter and garlic, then add heavy cream and cream cheese. Stir until smooth. Add Parmesan and mozzarella, stirring until glossy.
- Finish the Dish: Stir in spinach, sun-dried tomatoes, and Italian seasoning. Toss in penne until coated. Top with sliced chicken and fresh basil.
