  • 2 tbsp honey

Instructions

  1. Preheat the Oven – Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Prepare the Glaze – In a small bowl, whisk together olive oil, Dijon mustard, honey, lemon juice, garlic powder, salt, and black pepper until smooth.
  3. Coat the Vegetables – Place all vegetables on the prepared baking sheet. Pour the honey Dijon glaze over the vegetables and toss until evenly coated.
  4. Roast – Spread vegetables into an even layer. Roast for 25–30 minutes, stirring halfway through, until tender and caramelized around the edges.
