- 6 chicken drumsticks
- 3 tbsp honey
- 2 tbsp soy sauce
- 1 tbsp mustard
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1/2 cup shredded cabbage
- 1/4 cup shredded carrots
- 2 tbsp Greek yogurt or mayonnaise
- 1 tbsp lemon juice
- 2 tomatoes, halved
Instructions
- Marinate the Chicken: Mix honey, soy sauce, mustard, olive oil, paprika, salt, and pepper. Coat the drumsticks and marinate for at least 1 hour.
- Roast the Tomatoes: Drizzle halved tomatoes with olive oil and roast at 375°F (190°C) for 15 minutes.
- Cook the Chicken: Bake or grill the drumsticks at 375°F for 30-35 minutes.
- Prepare the Slaw: Mix cabbage, carrots, Greek yogurt, lemon juice, and salt.
- Serve: Plate the chicken with slaw and roasted tomatoes.
