Ingredients

Base:

  • 2 egg yolks

  • 30ml milk

  • 10ml honey

  • 35g cake flour

  • 1/2 teaspoon vanilla extract

Meringue:

  • 2 egg whites

  • 30g caster sugar

  • A few drops of lemon juice


Instructions

  • Preheat your oven to 375°F (190°C). Grease ramekins with butter and dust with sugar.

  • In a small bowl, whisk together egg yolks, milk, honey, and vanilla extract until smooth.

  • Sift in cake flour and stir until well combined. Set aside.

  • In a separate clean bowl, beat egg whites with a few drops of lemon juice until foamy. Gradually add sugar and beat until stiff peaks form.

  • Gently fold one-third of the meringue into the yolk mixture to lighten it, then carefully fold in the remaining meringue until fully incorporated.

  • Spoon the mixture into prepared ramekins, leveling the tops.

  • Place ramekins on a baking tray and bake for 12–15 minutes, or until risen and lightly golden.

  • Serve immediately for best texture and presentation.
