Base:

30ml milk

10ml honey

35g cake flour

1/2 teaspoon vanilla extract
Meringue:

2 egg whites

30g caster sugar

A few drops of lemon juice
Instructions

Preheat your oven to 375°F (190°C). Grease ramekins with butter and dust with sugar.

In a small bowl, whisk together egg yolks, milk, honey, and vanilla extract until smooth.

Sift in cake flour and stir until well combined. Set aside.

In a separate clean bowl, beat egg whites with a few drops of lemon juice until foamy. Gradually add sugar and beat until stiff peaks form.

Gently fold one-third of the meringue into the yolk mixture to lighten it, then carefully fold in the remaining meringue until fully incorporated.
