Honey Lime Chicken:

- 2 tbsp olive oil
- 2 tbsp honey
- Juice of 1 lime
- Zest of 1/2 lime
- 2 cloves garlic, minced
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
Brown Rice:
- 2 cups cooked brown rice
- 1 tbsp olive oil
- Juice of 1/2 lime
- Salt, to taste
Avocado Layer:
- 1 large ripe avocado, diced
- 1 tbsp lime juice
- Pinch of salt
- 1 tbsp chopped fresh cilantro
Fresh Toppings:
- 1/2 cup cherry tomatoes, diced
- 1/4 cup red onion, finely diced
- 2 tbsp chopped fresh cilantro
- Extra lime wedges for serving
Instructions
- Cook the Honey Lime Chicken: In a bowl, whisk together olive oil, honey, lime juice, lime zest, garlic, paprika, salt, and pepper. Add diced chicken and toss to coat well. Heat a skillet over medium-high heat. Cook chicken for 6–8 minutes, stirring occasionally, until caramelized and fully cooked through.
- Prepare the Brown Rice: In a bowl, toss warm cooked brown rice with olive oil, lime juice, and salt. Mix until evenly combined.
- Prepare the Avocado Layer: Gently mix diced avocado with lime juice, salt, and chopped cilantro. Keep chilled until ready to assemble.
- Assemble the Stack: Using a round mold (or a measuring cup), press brown rice firmly onto the plate as the base layer. Add a layer of honey lime chicken on top. Spoon the avocado mixture over the chicken. Carefully remove the mold. Garnish with cherry tomatoes, red onion, and fresh cilantro. Serve immediately with extra lime wedges.
