Honey Lime Chicken

- 1 1/2 tablespoons honey
- 2 cloves garlic, minced

- 1/4 teaspoon black pepper
Rice Stack Base
- 1 cup cooked jasmine or basmati rice
- 1 ripe mango, diced
- 1 ripe avocado, diced
- 1/2 cup cucumber, diced
- 1/2 cup cherry tomatoes, halved
- Fresh cilantro, chopped for garnish
Optional Garnish

Instructions
- Marinate the Chicken: In a bowl, combine olive oil, lime zest, lime juice, honey, garlic, paprika, salt, and pepper. Toss chicken to coat and let marinate 15–30 minutes.
- Cook the Chicken: Heat a skillet over medium-high heat and cook chicken for 5–7 minutes until golden and fully cooked. Remove and set aside.
- Assemble the Rice Stack: In serving bowls, layer cooked rice first. Top with diced mango, avocado, cucumber, and cherry tomatoes.
- Add Chicken: Arrange honey lime chicken slices over the top.
