  • 1 1/2 lb (700 g) boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 3 tbsp honey
  • Zest and juice of 1 lime
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • Salt and black pepper, to taste

For the Quinoa Stack

  • 1 cup quinoa, rinsed
  • 2 cups water or chicken broth
  • 1 ripe avocado, diced
  • 1/2 cup cherry tomatoes, diced
  • 2 green onions, sliced
  • 1 tbsp fresh cilantro, chopped

For the Creamy Yogurt Sauce

  • 1 cup Greek yogurt
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1 small garlic clove, grated
  • Salt and black pepper, to taste

Instructions

  1. Cook the Quinoa – Bring water or broth to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes until liquid is absorbed. Fluff and set aside.
  2. Marinate the Chicken – Whisk together olive oil, honey, lime zest, lime juice, garlic, paprika, salt, and pepper in a bowl. Add chicken and coat well. Marinate for at least 20 minutes.
  3. Cook the Chicken – Heat a skillet or grill pan over medium-high heat. Cook the chicken for 5–7 minutes per side until golden and cooked through. Let it rest briefly, then slice.
  4. Prepare the Yogurt Sauce – Mix Greek yogurt, olive oil, lime juice, garlic, salt, and pepper in a bowl until smooth and creamy.
  5. Assemble the Quinoa Stack – Using a ring mold or spoon, layer quinoa, diced avocado, tomatoes, and green onions.
  6. Serve – Top the stack with sliced honey lime chicken, drizzle with yogurt sauce, garnish with cilantro, and serve with lime wedges.
