For the Honey Lime Chicken
- 1 1/2 lb (700 g) boneless skinless chicken breasts
- 2 tbsp olive oil
- 3 tbsp honey
- Zest and juice of 1 lime
- 2 cloves garlic, minced
- 1 tsp paprika
- Salt and black pepper, to taste
For the Quinoa Stack
- 1 cup quinoa, rinsed
- 2 cups water or chicken broth
- 1 ripe avocado, diced
- 1/2 cup cherry tomatoes, diced
- 2 green onions, sliced
- 1 tbsp fresh cilantro, chopped
For the Creamy Yogurt Sauce
- 1 cup Greek yogurt
- 1 tbsp olive oil
- 1 tbsp lime juice
- 1 small garlic clove, grated
- Salt and black pepper, to taste
Instructions
- Cook the Quinoa – Bring water or broth to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes until liquid is absorbed. Fluff and set aside.
- Marinate the Chicken – Whisk together olive oil, honey, lime zest, lime juice, garlic, paprika, salt, and pepper in a bowl. Add chicken and coat well. Marinate for at least 20 minutes.
- Cook the Chicken – Heat a skillet or grill pan over medium-high heat. Cook the chicken for 5–7 minutes per side until golden and cooked through. Let it rest briefly, then slice.
- Prepare the Yogurt Sauce – Mix Greek yogurt, olive oil, lime juice, garlic, salt, and pepper in a bowl until smooth and creamy.
- Assemble the Quinoa Stack – Using a ring mold or spoon, layer quinoa, diced avocado, tomatoes, and green onions.
- Serve – Top the stack with sliced honey lime chicken, drizzle with yogurt sauce, garnish with cilantro, and serve with lime wedges.
