Instructions

  1. Cook the Rice – Bring chicken broth or water to a boil. Stir in rice, olive oil, and salt. Reduce heat, cover, and simmer for 15–18 minutes until rice is tender. Fluff with a fork and set aside.
  2. Prepare the Honey Lime Chicken – In a bowl, mix honey, lime juice, olive oil, minced garlic, chili powder, paprika, salt, and black pepper. Toss the diced chicken until well coated.
  3. Cook the Chicken – Heat a skillet over medium heat. Cook the chicken for 5–7 minutes, stirring occasionally, until fully cooked and caramelized in the honey lime glaze.
  4. Prepare the Avocado Layer – Mash the avocado with lime juice, salt, and black pepper until smooth and creamy.
  5. Assemble the Rice Stack – In serving bowls or plates, create a base layer of rice. Top with a layer of mashed avocado, then the honey lime chicken. Repeat for a stacked presentation if desired.
  6. Add Toppings – Scatter cherry tomatoes, red onion, and chopped cilantro over the top.
