For the Honey Lime Chicken:

- 1 tsp smoked paprika
- 2 tsp honey
- Zest and juice of 1 lime
- 2 tbsp fresh cilantro, chopped
For the Spicy Cauliflower Rice:
- 2 cups cauliflower rice
- 2 cloves garlic, minced
- 1/2–1 tsp red chili flakes (adjust to spice preference)
- 1 tbsp butter or olive oil
- 1 ripe avocado, diced
Instructions
- Cook chicken: Heat olive oil in a skillet over medium-high heat. Season chicken with salt, pepper, and smoked paprika. Cook 5–7 minutes until golden and cooked through. Drizzle with honey and lime juice, toss gently, then remove from heat.
- Prepare spicy cauliflower rice: In the same skillet, melt butter or heat olive oil. Sauté garlic for 30 seconds until fragrant. Add cauliflower rice and red chili flakes, cooking 4–5 minutes until tender. Stir in lime zest and half of the cilantro.
- Assemble stack: Layer cauliflower rice in a bowl or mold, top with honey lime chicken, then avocado. Sprinkle remaining cilantro on top.
