For the Honey Lime Chicken:
- 2 boneless, skinless chicken breasts, diced
- 1 tbsp olive oil
- Salt and black pepper, to taste
- 1 tsp smoked paprika
- 2 tsp honey
- Zest and juice of 1 lime
- 2 tbsp fresh cilantro, chopped
For the Spicy Cauliflower Rice:
- 2 cups cauliflower rice
- 2 cloves garlic, minced
- 1/2–1 tsp red chili flakes (adjust for spice)
- 1 tbsp butter or olive oil
For Assembly:
- 1 ripe avocado, diced

- Cook chicken: Heat olive oil in a skillet over medium-high heat. Season chicken with salt, pepper, and smoked paprika. Cook for 5–7 minutes until golden and cooked through. Drizzle with honey and lime juice, toss gently, then remove from heat.
- Prepare spicy cauliflower rice: In the same skillet, melt butter or heat olive oil. Sauté garlic for 30 seconds until fragrant. Add cauliflower rice and red chili flakes. Cook for 4–5 minutes until tender. Stir in lime zest and half of the chopped cilantro.
- Assemble stack: Layer cauliflower rice in a bowl or ring mold, top with honey lime chicken, then avocado. Sprinkle remaining cilantro on top.
- Serve: Enjoy immediately while warm and vibrant.
