For the Chicken

- 2 tablespoons olive oil
- 2 tablespoons honey
- Zest and juice of 1 lime
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- Salt and black pepper, to taste
For the Rice Bowl
- 2 cups cooked white or brown rice
- 1 cup corn kernels (fresh, frozen, or roasted)
- 1/2 cup crumbled feta cheese
- 1 small avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 2 tablespoons fresh cilantro, chopped

Instructions
- Marinate and Cook the Chicken – In a bowl, mix olive oil, honey, lime zest and juice, smoked paprika, garlic powder, salt, and pepper. Add chicken and toss to coat. Let marinate for 15–20 minutes. Heat a skillet over medium heat and cook chicken 5–7 minutes per side, or until fully cooked and golden brown. Remove from heat and let rest for 5 minutes before slicing.
- Prepare the Rice Bowl Base – Divide cooked rice evenly into serving bowls. Top with corn, cherry tomatoes, avocado slices, and crumbled feta cheese.
- Assemble the Bowl – Place sliced chicken over the rice and vegetables. Drizzle with any remaining honey-lime marinade and sprinkle with chopped cilantro.
- Serve – Garnish with lime wedges, sesame seeds, or extra honey drizzle if desired. Serve warm.
