Rice:

  • 2 cups cooked jasmine or brown rice

Chicken:

  • 2 chicken breasts, thinly sliced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Salad:

  • 1 ripe mango, diced
  • 1 avocado, diced

Honey Lime Dressing:

  • 3 tablespoons honey
  • Juice and zest of 1 lime
  • 1 tablespoon soy sauce
  • 1 teaspoon grated fresh ginger

Instructions

  1. Prepare the Dressing: In a small bowl, whisk together honey, lime juice and zest, soy sauce, ginger, garlic, and chili flakes.

  4. Finish: Drizzle remaining honey lime dressing over the top. Garnish with fresh cilantro or green onions if desired. Serve immediately.
