Rice Stack Base

  • 1 1/2 cups cooked jasmine or basmati rice
  • 1 tbsp olive oil
  • Salt, to taste

Mango Feta Layer

  • 1 1/2 cups ripe mango, diced
  • 150 g (5 oz) feta cheese, crumbled
  • 2 tbsp fresh cilantro or mint, chopped
  • 1 tbsp fresh lime juice

Fresh Toppings

  • 1/2 avocado, sliced
  • 1/4 cup red onion, finely diced
  • Extra cilantro or mint for garnish

Instructions

  1. Marinate the Chicken: In a bowl, whisk olive oil, lime zest, lime juice, honey, garlic, cumin, paprika, salt, and pepper. Add chicken and marinate for at least 20 minutes.
  2. Cook the Chicken: Heat a skillet or grill pan over medium-high heat. Cook chicken for 5–6 minutes per side until caramelized and cooked through. Rest briefly, then slice.
  3. Prepare the Rice: Fluff cooked rice with olive oil and a pinch of salt. Keep warm.
  4. Make Mango Feta Mix: In a bowl, gently combine diced mango, crumbled feta, lime juice, and chopped herbs.
