Lemon Greek Chicken:
- 1 1/2 lb (700 g) boneless skinless chicken thighs or breasts
- 3 tbsp olive oil
- Zest and juice of 2 lemons
- 4 cloves garlic, minced
- 2 tsp dried oregano
- 1 tsp paprika
- 1/2 tsp ground cumin
- Salt and black pepper, to taste
For the Bake:
- 1 small red onion, sliced
- 1/2 cup cherry tomatoes, halved
- 1/3 cup Kalamata olives, pitted
- 3/4 cup crumbled feta cheese
Instructions
- Marinate the Chicken: In a large bowl, whisk olive oil, lemon zest and juice, garlic, oregano, paprika, cumin, salt, and pepper. Add chicken and toss to coat well. Marinate for at least 20 minutes (up to 12 hours for deeper flavor).
- Preheat the Oven: Preheat oven to 400°F (200°C).
- Assemble the Dish: Arrange marinated chicken in a baking dish. Scatter red onion, cherry tomatoes, and olives around the chicken. Pour any remaining marinade over the top.
- Bake: Bake uncovered for 30–35 minutes, until the chicken is juicy and cooked through with lightly caramelized edges.
- Add the Feta: Sprinkle feta over the chicken and return to the oven for 5 minutes, just until softened and slightly golden.
- Finish & Serve: Garnish with fresh parsley or dill and serve with lemon wedges. Perfect with roasted potatoes, rice, or warm pita.
