Description

Ingredients

  • 1 lb Italian sausage (or chicken/turkey sausage)

  • 2 tbsp olive oil

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 large onion, sliced

  • 3 cloves garlic, minced

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • 1/4 tsp red pepper flakes (optional)

  • Salt and pepper to taste

  • 1/4 cup chicken broth

  • Fresh parsley, chopped (for garnish)

  • Hoagie rolls or Italian bread (optional for serving)


Instructions

  • Heat 1 tbsp olive oil in a large skillet over medium heat.

  • Add sausages and brown on all sides (about 7–8 minutes). Remove and set aside.

  • In the same skillet, heat remaining 1 tbsp olive oil.

  • Sauté sliced peppers, onions, and garlic until softened.

  • Stir in oregano, basil, red pepper flakes, salt, and pepper. Cook for 2–3 more minutes.

  • Return sausages to the skillet, pour in chicken broth, and cover. Simmer for 10 minutes.

  • Garnish with chopped parsley. Serve as is or in toasted hoagie rolls or Italian bread.

  • Add a splash of balsamic vinegar for extra richness.
