Ingredients

1 lb Italian sausage (or chicken/turkey sausage)

2 tbsp olive oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

1 large onion, sliced

3 cloves garlic, minced

1 tsp dried oregano

1 tsp dried basil

1/4 tsp red pepper flakes (optional)

Salt and pepper to taste

1/4 cup chicken broth

Fresh parsley, chopped (for garnish)

Hoagie rolls or Italian bread (optional for serving)
Instructions

Heat 1 tbsp olive oil in a large skillet over medium heat.

Add sausages and brown on all sides (about 7–8 minutes). Remove and set aside.

In the same skillet, heat remaining 1 tbsp olive oil.

Sauté sliced peppers, onions, and garlic until softened.

Stir in oregano, basil, red pepper flakes, salt, and pepper. Cook for 2–3 more minutes.

Return sausages to the skillet, pour in chicken broth, and cover. Simmer for 10 minutes.

Garnish with chopped parsley. Serve as is or in toasted hoagie rolls or Italian bread.
