Beef Curry:

Curry Sauce:
- 1 cup coconut milk
- 1 cup beef broth
- 1 medium potato, diced
- 1 carrot, sliced
- 1 teaspoon salt

- 1 tablespoon lime juice

Instructions
- Prep Ingredients: Start by cutting the beef chuck into bite-sized cubes. Finely chop the onion, mince the garlic, and grate the fresh ginger.
- Sear Beef: In a large pot, heat vegetable oil over medium-high heat. Add the beef cubes and brown on all sides. Remove the beef and set aside.
- Sauté Aromatics: In the same pot, add more oil if needed. Sauté the onion, garlic, and ginger until fragrant.
- Add Spices: Stir in the curry powder, cumin, coriander, paprika, chili powder, and turmeric. Cook for a minute to toast the spices.
- Build Flavor: Add the tomato paste and cook for another minute. Pour in the coconut milk and beef broth, stirring to combine.
- Add Vegetables: Return the beef to the pot. Add the diced potato and sliced carrot. Season with salt and pepper.
- Simmer: Bring the curry to a simmer, then reduce the heat and cover. Let it simmer gently for about 1.5 to 2 hours until the beef is tender.
- Finish: Stir in lime juice for a fresh kick. Adjust seasoning if needed.
