Ingredients

Units Scale

Beef Curry:

  • 1 lb (450 g) beef chuck, cut into bite-sized cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon chili powder (adjust to taste)
  • 1/2 teaspoon turmeric
  • 1 tablespoon tomato paste

Curry Sauce:

  • 1 cup coconut milk
  • 1 cup beef broth
  • 1 medium potato, diced
  • 1 carrot, sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lime juice

Garnish:

  • Fresh cilantro, chopped for garnish

Instructions

  1. Prep Ingredients: Start by cutting the beef chuck into bite-sized cubes. Finely chop the onion, mince the garlic, and grate the fresh ginger.
  2. Sear Beef: In a large pot, heat vegetable oil over medium-high heat. Add the beef cubes and brown on all sides. Remove the beef and set aside.
  3. Sauté Aromatics: In the same pot, add more oil if needed. Sauté the onion, garlic, and ginger until fragrant.
  4. Add Spices: Stir in the curry powder, cumin, coriander, paprika, chili powder, and turmeric. Cook for a minute to toast the spices.
  5. Build Flavor: Add the tomato paste and cook for another minute. Pour in the coconut milk and beef broth, stirring to combine.
  6. Add Vegetables: Return the beef to the pot. Add the diced potato and sliced carrot. Season with salt and pepper.
  7. Simmer: Bring the curry to a simmer, then reduce the heat and cover. Let it simmer gently for about 1.5 to 2 hours until the beef is tender.
  8. Finish: Stir in lime juice for a fresh kick. Adjust seasoning if needed.
  9. Serve: Garnish with chopped fresh cilantro before serving.

Notes

  • You can adjust the spice level by adding more or less chili powder.
  • For a thicker curry, mix a tablespoon of cornstarch with water and stir it into the curry during the last 15 minutes of cooking.
