  • 1 red bell pepper, sliced
  • 1 cup cherry tomatoes
  • 1 tbsp olive oil

For the Lemon Whipped Feta:

  • 1/2 cup crumbled feta cheese
  • 1/4 cup plain Greek yogurt
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp lemon zest
  • 1/4 tsp black pepper

Instructions

  1. Roast the Vegetables: Preheat oven to 400°F (200°C). Toss zucchini, bell pepper, and cherry tomatoes with olive oil, garlic powder, oregano, salt, and pepper. Roast for 15–18 minutes until tender and lightly caramelized.
  2. Cook the Orzo: In a saucepan, bring chicken broth to a simmer. Add orzo and salt, and cook for 8–10 minutes until tender. Drain any excess liquid and stir in olive oil.
  3. Cook the Chicken: Heat olive oil in a skillet over medium-high heat. Add chicken, garlic, oregano, salt, and pepper. Cook 5–6 minutes until chicken is golden and cooked through. Stir in balsamic vinegar and cook 1 additional minute.
  4. Prepare the Lemon Whipped Feta: In a small bowl, blend feta cheese, Greek yogurt, olive oil, lemon juice, lemon zest, and black pepper until smooth and creamy.
  5. Assemble the Bowl: Divide orzo among bowls. Top with roasted vegetables and balsamic chicken. Add dollops of lemon whipped feta on top.
  6. Garnish & Serve: Sprinkle with fresh parsley and serve with lemon wedges for extra brightness.
