Ingredients

  • 2 boneless skinless chicken breasts

  • 1 tbsp olive oil

  • 1 tbsp chipotle seasoning

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp smoked paprika

  • Salt and pepper, to taste

  • 1/2 cup ranch dressing

  • 1 tbsp chipotle peppers in adobo sauce, minced

  • 1/2 cup shredded lettuce

  • 1 medium tomato, diced

  • 1/2 cup shredded cheddar cheese

  • 1/2 cup sour cream

  • 4 large flour tortillas

  • 1/2 cup cooked rice (optional)

  • 1/4 cup fresh cilantro, chopped (for garnish)


Instructions

  • Preheat your grill or grill pan over medium-high heat.

  • Brush the chicken breasts with olive oil and season with chipotle seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper.

  • Grill the chicken for 5-6 minutes per side, or until fully cooked (165°F internal temperature). Let rest for 3-5 minutes, then slice into thin strips.

  • In a small bowl, combine ranch dressing and minced chipotle peppers in adobo sauce. Set aside.

  • Warm the tortillas on the grill or in a skillet for 30 seconds per side.

  • To assemble each burrito: layer grilled chicken, shredded lettuce, diced tomato, shredded cheddar, cooked rice (if using), and drizzle with chipotle ranch sauce. Top with a dollop of sour cream.

  • Fold in the sides of the tortilla, then roll up tightly.

  • Serve warm, garnished with fresh cilantro.
