Ingredients

2 boneless ribeye steaks (or your preferred cut)

1 lb baby potatoes, halved

2 tablespoons olive oil

3 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Optional: 1 tablespoon fresh lemon juice or zest (for extra brightness)
Instructions

Boil the halved baby potatoes in salted water for 10-12 minutes until just fork-tender. Drain and set aside.

Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add potatoes and cook 5-7 minutes until golden and crispy, stirring occasionally. Remove and set aside.

Add remaining olive oil to the skillet. Season steaks generously with salt, pepper, thyme, and rosemary on both sides.
