Ingredients

  • 2 boneless ribeye steaks (or your preferred cut)

  • 1 lb baby potatoes, halved

  • 2 tablespoons olive oil

  • 3 tablespoons unsalted butter

  • 4 cloves garlic, minced

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • Salt and pepper, to taste

  • Fresh parsley, chopped (for garnish)

  • Optional: 1 tablespoon fresh lemon juice or zest (for extra brightness)


Instructions

  • Boil the halved baby potatoes in salted water for 10-12 minutes until just fork-tender. Drain and set aside.

  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add potatoes and cook 5-7 minutes until golden and crispy, stirring occasionally. Remove and set aside.

  • Add remaining olive oil to the skillet. Season steaks generously with salt, pepper, thyme, and rosemary on both sides.

  • Sear steaks 3-4 minutes per side for medium-rare (or adjust for desired doneness). Remove and let rest.

  • Lower heat to medium. Melt butter in the skillet and sauté garlic for 1-2 minutes until fragrant (do not burn).

  • Return potatoes to skillet, tossing to coat in garlic butter.

  • Slice the rested steaks and serve over the potatoes. Garnish with parsley and drizzle with lemon juice or zest if using.

  • Yukon Gold potatoes can be substituted for baby potatoes.
