Crust:

  • 1 cup almond flour
  • 2 tbsp melted butter
  • 1 tbsp powdered monk fruit or erythritol
  • pinch salt

Cheesecake filling:

  • 8 oz cream cheese, softened
  • 1/2 cup heavy whipping cream
  • 1/4 cup powdered keto sweetener
  • 1 tsp vanilla extract

Strawberry center:

  • 1/2 cup strawberries
  • 1 tbsp keto sweetener
  • 1 tsp lemon juice

Pink coating:

  • 1/2 cup strawberry puree
  • 1/2 cup whipped cream
  • 4 oz cream cheese

Topping:

  • fresh strawberries
  • mint leaves

Instructions

  1. Make crust: Mix almond flour, melted butter, sweetener, and salt. Press into silicone dome molds or muffin cups to form a base. Refrigerate 15 minutes to firm up.
  2. Make strawberry center: Blend strawberries with sweetener and lemon juice. Freeze small spoonfuls in mini silicone molds for 30–40 minutes until firm.
  3. Make cheesecake filling: Beat together cream cheese, heavy cream, sweetener, and vanilla until smooth and fluffy.
  4. Assemble domes: Add cheesecake filling to molds. Place a frozen strawberry center in the middle. Cover with more cheesecake filling. Add the almond crust on the bottom. Freeze 1–2 hours to set.
  5. Coat and decorate: Mix strawberry puree with whipped cream and cream cheese to create a pink coating. Spread or dip the domes. Top with fresh strawberries and mint.
