For the Gratin:
- 2 medium beets, peeled and thinly sliced
- 2 medium potatoes, peeled and thinly sliced
- 2 medium carrots, peeled and thinly sliced
- 100g feta cheese, crumbled
- 1 cup heavy cream or plant-based cream
- 2 cloves garlic, minced
- 1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
- 2 tbsp olive oil
- Salt and black pepper, to taste
Instructions
- Preheat the oven: Set to 190°C (375°F). Grease a baking dish with a little olive oil.
- Prepare the cream mixture: In a small bowl, combine heavy cream, minced garlic, thyme, salt, and pepper.
- Layer the vegetables: Arrange beet, potato, and carrot slices in alternating layers in the baking dish. Sprinkle some crumbled feta between the layers.
- Add cream and bake: Pour the cream mixture evenly over the layered vegetables. Drizzle with a little olive oil. Cover with foil and bake for 35 minutes. Remove foil and bake for another 20–25 minutes until vegetables are tender and top is golden.
- Serve warm: Let it cool slightly before serving. Garnish with extra thyme if desired.
