Ingredients

300g (10 oz) spaghetti

4 tablespoons olive oil

4 garlic cloves, thinly sliced

Zest and juice of 1 lemon

1 cup fresh basil leaves, chopped

2 balls burrata cheese

Salt & pepper, to taste

Optional: chili flakes, for added heat
Instructions

Cook the Spaghetti:
Boil the spaghetti in salted water until al dente. Reserve ½ cup of the pasta water, then drain. -
Make the Garlic Oil:
In a large skillet, heat olive oil over medium heat. Add sliced garlic and sauté gently for 2–3 minutes, until golden and aromatic. Avoid burning. -
Combine:
Add the drained spaghetti to the skillet and toss in the garlic oil. Stir in lemon zest, lemon juice, and chopped basil. Add some reserved pasta water to loosen the sauce if needed. Season with salt, pepper, and optional chili flakes. -
Serve:
Divide the pasta onto plates and top each with a burrata ball. Garnish with more basil and lemon zest if desired. Serve immediately.
