Description

This Lemon-Basil Spaghetti with Burrata & Garlic Oil is a fresh, vibrant pasta dish that’s perfect for summer. Featuring al dente spaghetti tossed in fragrant garlic oil, bright lemon, and basil, and finished with creamy burrata cheese, it’s a simple yet elegant vegetarian meal.


Ingredients

  • 300g (10 oz) spaghetti

  • 4 tablespoons olive oil

  • 4 garlic cloves, thinly sliced

  • Zest and juice of 1 lemon

  • 1 cup fresh basil leaves, chopped

  • 2 balls burrata cheese

  • Salt & pepper, to taste

  • Optional: chili flakes, for added heat


Instructions

  • Cook the Spaghetti:
    Boil the spaghetti in salted water until al dente. Reserve ½ cup of the pasta water, then drain.

  • Make the Garlic Oil:
    In a large skillet, heat olive oil over medium heat. Add sliced garlic and sauté gently for 2–3 minutes, until golden and aromatic. Avoid burning.

  • Combine:
    Add the drained spaghetti to the skillet and toss in the garlic oil. Stir in lemon zest, lemon juice, and chopped basil. Add some reserved pasta water to loosen the sauce if needed. Season with salt, pepper, and optional chili flakes.

  • Serve:
    Divide the pasta onto plates and top each with a burrata ball. Garnish with more basil and lemon zest if desired. Serve immediately.

Notes

  • Serve with crusty bread or a green salad for a complete meal.

  • Add cherry tomatoes or arugula for extra color and flavor.

  • Burrata is best served at room temperature for maximum creaminess.
