Description

Ingredients

  • 2 tablespoons olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup Arborio rice

  • 1/2 cup dry white wine

  • 4 cups chicken or vegetable broth, warmed

  • 1/2 cup grated Parmesan cheese

  • 2 tablespoons unsalted butter

  • Juice and zest of 1 lemon

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 pound cooked lobster meat, chopped

  • 2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and garlic; sauté for 2–3 minutes until soft and translucent.

  2. Stir in Arborio rice and toast for 1–2 minutes until slightly golden.

  3. Pour in white wine, stirring until it’s mostly absorbed.

  4. Add the warm broth gradually, one ladle at a time, stirring often. Allow each addition to absorb before adding more. Cook for 20–25 minutes, until the rice is creamy and tender.

  5. Stir in Parmesan cheese, butter, lemon juice, and zest. Season with salt and pepper.

  6. Fold in the chopped cooked lobster. Cook for 2–3 more minutes until heated through.

  7. Serve hot, garnished with chopped parsley.

Notes

  • Substitute shrimp or scallops if lobster isn’t available.

  • Use seafood stock instead of chicken or vegetable broth for deeper flavor.
