Ingredients

1 lb sea scallops, patted dry

2 tablespoons olive oil

3 tablespoons unsalted butter

2 cloves garlic, minced

Juice of 1 lemon

Zest of 1 lemon

Salt and freshly ground black pepper, to taste

2 tablespoons fresh parsley, chopped
Instructions

Sear the Scallops:

Heat olive oil in a large skillet over medium-high heat.

Season scallops with salt and pepper.

Sear scallops for 2–3 minutes per side until golden-brown and opaque. Transfer to a plate and set aside.

Make the Lemon Butter Sauce:

In the same skillet, reduce heat to medium and add butter.

Once melted, add garlic and sauté for about 30 seconds.

Stir in lemon juice and zest. Simmer briefly.
