Ingredients

1 can (15 oz) chickpeas, drained and rinsed

2 cloves garlic, minced

1 tsp lemon zest

2 tbsp lemon juice

1/4 cup chopped fresh parsley

1/2 tsp cumin

1/2 tsp salt

1/4 tsp black pepper

1/4 cup flour

2-3 tbsp olive oil (for pan frying)
Instructions

In a food processor, pulse chickpeas, garlic, lemon zest, lemon juice, parsley, cumin, salt, and pepper until combined but slightly chunky.

Transfer to a bowl and stir in flour until incorporated.

Form the mixture into small patties.

Heat olive oil in a skillet over medium heat.

Cook the patties for 3–4 minutes per side until golden and crispy.

Serve warm with dipping sauce or tucked into a pita with veggies.

Add a pinch of chili flakes for subtle heat.

For a lighter option, bake fritters at 375°F (190°C) for about 20 minutes, flipping halfway.
