Description

These Lemon Parsley Chickpea Fritters are crisp on the outside, tender on the inside, and bursting with zesty lemon and fresh herbs. A quick, vegetarian, and protein-packed meal or snack, they’re perfect for wraps, bowls, or served with your favorite dipping sauce.


Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 2 cloves garlic, minced

  • 1 tsp lemon zest

  • 2 tbsp lemon juice

  • 1/4 cup chopped fresh parsley

  • 1/2 tsp cumin

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/4 cup flour

  • 2-3 tbsp olive oil (for pan frying)


Instructions

  • In a food processor, pulse chickpeas, garlic, lemon zest, lemon juice, parsley, cumin, salt, and pepper until combined but slightly chunky.

  • Transfer to a bowl and stir in flour until incorporated.

  • Form the mixture into small patties.

  • Heat olive oil in a skillet over medium heat.

  • Cook the patties for 3–4 minutes per side until golden and crispy.

  • Serve warm with dipping sauce or tucked into a pita with veggies.

Notes

  • Add a pinch of chili flakes for subtle heat.

  • For a lighter option, bake fritters at 375°F (190°C) for about 20 minutes, flipping halfway.

  • Great served with tzatziki, tahini sauce, or a lemon yogurt dip.

  • Refrigerate leftovers in an airtight container for up to 3 days.
