For the chicken:

- 2 tbsp olive oil
- 2 tsp Dijon mustard

- 1 tsp garlic powder

For the orzo:
- 1 cup orzo pasta
- 1 tbsp olive oil
- 1 garlic clove, minced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup baby spinach, chopped
- Salt and pepper, to taste
For the garlic whipped feta:
- 100g (3.5 oz) feta cheese, crumbled
- 3 tbsp Greek yogurt
- 1 garlic clove, minced
- 1 tsp olive oil
- Freshly ground black pepper
Optional garnish:
- Fresh parsley or dill, chopped
- Lemon wedges
Instructions
- Marinate the chicken: In a bowl, combine olive oil, Dijon mustard, lemon zest and juice, garlic powder, salt, and pepper. Add chicken strips and toss to coat. Let marinate 10–15 minutes.
- Cook the chicken: Heat a skillet over medium-high heat. Cook chicken 5–7 minutes, turning occasionally, until golden and cooked through. Remove from heat.
- Cook the orzo: In a separate pot, cook orzo according to package instructions. Drain and return to the pot. Stir in olive oil, garlic, cherry tomatoes, and spinach. Season with salt and pepper.
- Make the garlic whipped feta: In a small bowl or food processor, blend feta, Greek yogurt, minced garlic, and olive oil until smooth and creamy. Season with black pepper to taste.
- Assemble the bowl: Divide orzo among serving bowls. Top with cooked chicken and a dollop of garlic whipped feta. Garnish with fresh parsley or dill and serve with lemon wedges.
