For the orzo:

  • 1 cup orzo pasta
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup baby spinach, chopped
  • Salt and pepper, to taste

For the garlic whipped feta:

  • 100g (3.5 oz) feta cheese, crumbled
  • 3 tbsp Greek yogurt
  • 1 garlic clove, minced
  • 1 tsp olive oil
  • Freshly ground black pepper

Optional garnish:

  • Fresh parsley or dill, chopped
  • Lemon wedges

Instructions

  1. Marinate the chicken: In a bowl, combine olive oil, Dijon mustard, lemon zest and juice, garlic powder, salt, and pepper. Add chicken strips and toss to coat. Let marinate 10–15 minutes.
  2. Cook the chicken: Heat a skillet over medium-high heat. Cook chicken 5–7 minutes, turning occasionally, until golden and cooked through. Remove from heat.
  3. Cook the orzo: In a separate pot, cook orzo according to package instructions. Drain and return to the pot. Stir in olive oil, garlic, cherry tomatoes, and spinach. Season with salt and pepper.
  4. Make the garlic whipped feta: In a small bowl or food processor, blend feta, Greek yogurt, minced garlic, and olive oil until smooth and creamy. Season with black pepper to taste.
  5. Assemble the bowl: Divide orzo among serving bowls. Top with cooked chicken and a dollop of garlic whipped feta. Garnish with fresh parsley or dill and serve with lemon wedges.
