  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • Zest and juice of 1 lemon
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
  • 1 cup orzo pasta
  • 1 1/2 cups chicken broth
  • 1 cup baby spinach
  • 1/2 cup cherry tomatoes, halved

For Honey Whipped Feta:

  • 3/4 cup feta cheese, crumbled
  • 1/4 cup Greek yogurt
  • 2 tsp honey
  • 1 tsp olive oil
  • Black pepper, to taste

Instructions

  1. Marinate chicken: In a small bowl, mix olive oil, Dijon mustard, lemon zest, lemon juice, garlic, salt, and pepper. Coat chicken evenly and let sit 10–15 minutes.
  2. Cook orzo: In a saucepan, cook orzo in chicken broth according to package instructions. Once tender, stir in spinach and cherry tomatoes until spinach wilts.
  3. Cook chicken: Heat a skillet over medium-high heat and cook chicken 5–6 minutes per side until golden and fully cooked. Slice thinly.
  4. Make honey whipped feta: Blend feta, Greek yogurt, honey, olive oil, and black pepper until smooth and creamy.
  5. Assemble bowls: Layer orzo, spinach, and tomatoes in bowls. Top with sliced chicken and dollops of honey whipped feta.
