Lemon Dijon Chicken

Orzo
- 1 cup dry orzo pasta
- 2 cups chicken broth or water
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 2 tbsp chopped fresh parsley
Lemon Whipped Feta
- 3/4 cup crumbled feta cheese
- 1/2 cup Greek yogurt
- 1 tbsp olive oil
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- Pinch of salt
Instructions
- Marinate the Chicken – In a bowl, whisk olive oil, lemon juice, Dijon mustard, garlic, oregano, paprika, salt, and pepper. Coat chicken and let marinate for 20 minutes.
- Cook the Orzo – Bring chicken broth to a boil. Add orzo and cook according to package instructions until tender. Drain any excess liquid and set aside.
- Cook the Chicken – Heat a skillet over medium heat. Cook marinated chicken for 5–7 minutes per side until golden and fully cooked (internal temp 165°F / 74°C). Let rest and slice.
- Prepare Lemon Whipped Feta – In a food processor or blender, combine feta, Greek yogurt, olive oil, lemon juice, lemon zest, and a pinch of salt. Blend until smooth and creamy.
- Assemble the Bowl – Divide cooked orzo between bowls. Top with sliced chicken, cherry tomatoes, cucumber, red onion, and parsley.
- Finish & Serve – Spoon or drizzle lemon whipped feta over the bowl. Serve warm with extra lemon wedges if desired.
