  • 1 lb boneless skinless chicken breast, cubed
  • 2 tbsp olive oil
  • 2 tsp Dijon mustard
  • Zest and juice of 1 lemon
  • 2 cloves garlic, minced
  • Salt & black pepper to taste

For the Orzo

  • 1 1/2 cups orzo pasta
  • 2 cups chicken broth or water
  • 1 tbsp olive oil
  • Salt to taste

For the Whipped Goat Cheese

  • 1/2 cup goat cheese
  • 2 tbsp Greek yogurt or cream
  • 1 tsp olive oil
  • Pinch of black pepper

For the Bowl

  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook Orzo: Cook orzo according to package instructions in chicken broth. Drain and toss with olive oil and salt.
  2. Prepare Chicken: Toss chicken with olive oil, Dijon mustard, lemon zest and juice, garlic, salt, and pepper. Cook in a skillet over medium heat 6–8 minutes until golden and fully cooked.
  3. Make Whipped Goat Cheese: Blend goat cheese, Greek yogurt or cream, olive oil, and black pepper until smooth and creamy.
  4. Assemble Bowls: Layer orzo as the base, then top with chicken, cherry tomatoes, spinach, and dollops of whipped goat cheese.
  5. Garnish and Serve: Garnish with fresh parsley and extra lemon juice if desired. Serve warm.
