For the Chicken
- 1 lb boneless skinless chicken breast, cubed
- 2 tbsp olive oil
- 2 tsp Dijon mustard
- Zest and juice of 1 lemon
- 2 cloves garlic, minced
- Salt & black pepper to taste
For the Orzo
- 1 1/2 cups orzo pasta
- 2 cups chicken broth or water
- 1 tbsp olive oil
- Salt to taste
For the Whipped Goat Cheese
- 1/2 cup goat cheese
- 2 tbsp Greek yogurt or cream
- 1 tsp olive oil
- Pinch of black pepper
For the Bowl
- 1 cup cherry tomatoes, halved
- 1 cup baby spinach
- 1/4 cup fresh parsley, chopped
Instructions
- Cook Orzo: Cook orzo according to package instructions in chicken broth. Drain and toss with olive oil and salt.
- Prepare Chicken: Toss chicken with olive oil, Dijon mustard, lemon zest and juice, garlic, salt, and pepper. Cook in a skillet over medium heat 6–8 minutes until golden and fully cooked.
- Make Whipped Goat Cheese: Blend goat cheese, Greek yogurt or cream, olive oil, and black pepper until smooth and creamy.
- Assemble Bowls: Layer orzo as the base, then top with chicken, cherry tomatoes, spinach, and dollops of whipped goat cheese.
- Garnish and Serve: Garnish with fresh parsley and extra lemon juice if desired. Serve warm.
