Lemon Dijon Chicken:
- 2 boneless, skinless chicken breasts, sliced
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- Juice and zest of 1 lemon
- 2 garlic cloves, minced
- 1/2 teaspoon dried oregano
- Salt and black pepper, to taste
For the Orzo & Spinach:
- 1 cup dry orzo pasta
- 2 cups fresh spinach
- 1 tablespoon olive oil
- 1/4 teaspoon salt
Feta Yogurt Sauce:
- 1/2 cup plain Greek yogurt
- 1/3 cup crumbled feta cheese
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh dill (or parsley)
- 1 tablespoon olive oil
- Black pepper, to taste
Instructions
- Cook the Orzo: Bring a pot of salted water to a boil. Cook orzo according to package instructions until al dente. Drain and set aside.
- Sauté the Chicken: In a bowl, mix olive oil, Dijon mustard, lemon juice and zest, garlic, oregano, salt, and pepper. Toss chicken slices in the marinade. Heat a skillet over medium heat and cook chicken for 5–7 minutes until golden and fully cooked.
- Add Spinach: In the same skillet, add 1 tablespoon olive oil and fresh spinach. Cook for 1–2 minutes until wilted. Stir in cooked orzo and toss gently.
- Prepare the Feta Yogurt Sauce: In a small bowl, combine Greek yogurt, feta, lemon juice, dill, olive oil, and black pepper. Mix until creamy and smooth.
- Assemble & Serve: Spoon lemon Dijon chicken and orzo-spinach mixture into bowls. Drizzle generously with feta yogurt sauce. Garnish with extra herbs if desired. Serve warm.
