For the Chicken

- 2 tbsp olive oil
- 2 tbsp fresh lemon juice
- 2 cloves garlic, minced

- Salt and black pepper to taste
For the Grain Base
- 2 cups cooked grains (quinoa, rice, or farro)
- 1 cup steamed or roasted vegetables (zucchini, bell peppers, or carrots)
For the Dressing
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- Salt and black pepper to taste
For Assembly
- 1 cup baby spinach or mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup thinly sliced red onion
- Optional: fresh dill sprigs for garnish
Instructions
- Marinate the Chicken – In a bowl, combine olive oil, lemon juice, garlic, dill, salt, and pepper. Add chicken slices and toss to coat. Let marinate for at least 20–30 minutes.
- Cook the Chicken – Heat a skillet over medium-high heat. Cook chicken for 4–6 minutes per side until golden and fully cooked. Remove and let rest briefly.
- Prepare the Dressing – In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper until emulsified.
- Assemble the Bowls – Divide cooked grains between bowls. Layer with greens, roasted vegetables, cherry tomatoes, and red onion. Top with cooked chicken.
- Drizzle and Serve – Pour the lemon-dill dressing over each bowl and garnish with fresh dill if desired. Serve immediately.
