For Lemon Garlic Chicken Orzo:

  • 1 cup dry orzo pasta
  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 2 cups chicken broth
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 cup fresh spinach

For Garlic Whipped Feta:

  • 1/2 cup feta cheese, crumbled
  • 1/3 cup Greek yogurt
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken pieces and cook until golden and fully cooked, about 6–8 minutes. Remove and set aside. In the same skillet, add garlic and cook for 1 minute until fragrant.
  2. Add orzo and toast lightly for 1–2 minutes. Pour in chicken broth, lemon juice, lemon zest, oregano, paprika, salt, and pepper. Bring to a simmer.
  3. Cook, stirring occasionally, until orzo is tender and liquid is absorbed, about 10 minutes. Stir in spinach and cooked chicken, mixing until spinach wilts.
  4. In a blender or bowl, combine feta, Greek yogurt, garlic, olive oil, and lemon juice. Blend or whisk until smooth and creamy.
  5. Serve the orzo warm topped with garlic whipped feta.
