  • 1/2 cup plain Greek yogurt
  • 1/4 cup crumbled feta cheese
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 small garlic clove, minced
  • Salt and black pepper, to taste

For the Bowl Toppings

  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach or arugula
  • 1/4 red onion, thinly sliced
  • Fresh parsley or dill, chopped

Instructions

  1. Marinate the Chicken – In a bowl, whisk olive oil, lemon juice, lemon zest, garlic, oregano, paprika, salt, and pepper. Add chicken and coat well. Marinate 20–30 minutes for extra flavor.
  2. Cook the Chicken – Grill or pan-sear chicken over medium heat for 5–6 minutes per side until golden and fully cooked. Let rest, then slice.
  3. Cook the Orzo – In a saucepan, heat olive oil over medium heat. Add orzo and toast for 1 minute. Pour in broth, bring to a boil, then reduce heat and simmer 8–10 minutes until tender. Fluff with a fork.
  4. Prepare the Lemon Feta Yogurt Sauce – In a small bowl, mix Greek yogurt, feta, lemon juice, lemon zest, garlic, salt, and pepper until smooth.
