- 1 tsp salt
For the Orzo
- 1 1/2 cups dry orzo pasta
- 1 tbsp olive oil
- 2 cups chicken or vegetable broth
- Salt, to taste
For the Lemon Feta Yogurt Sauce
- 1/2 cup plain Greek yogurt
- 1/4 cup crumbled feta cheese
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 small garlic clove, minced
- Salt and black pepper, to taste
For the Bowl Toppings
- 1 cup cherry tomatoes, halved
- 1 cup baby spinach or arugula
- 1/4 red onion, thinly sliced
- Fresh parsley or dill, chopped
Instructions
- Marinate the Chicken – In a bowl, whisk olive oil, lemon juice, lemon zest, garlic, oregano, paprika, salt, and pepper. Add chicken and coat well. Marinate 20–30 minutes for extra flavor.
- Cook the Chicken – Grill or pan-sear chicken over medium heat for 5–6 minutes per side until golden and fully cooked. Let rest, then slice.
- Cook the Orzo – In a saucepan, heat olive oil over medium heat. Add orzo and toast for 1 minute. Pour in broth, bring to a boil, then reduce heat and simmer 8–10 minutes until tender. Fluff with a fork.
- Prepare the Lemon Feta Yogurt Sauce – In a small bowl, mix Greek yogurt, feta, lemon juice, lemon zest, garlic, salt, and pepper until smooth.
- Assemble the Bowls – Divide orzo into bowls. Top with sliced chicken, cherry tomatoes, spinach, and red onion. Drizzle generously with lemon feta yogurt sauce and sprinkle with fresh herbs.
