Sweet Potato Rounds:
- 2 large sweet potatoes, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- Salt and black pepper to taste
Toppings:
- 6 ounces Brie cheese, cut into small pieces
- 1/2 cup dried cranberries
- 1/2 cup walnuts, toasted
Sweet Chili Pineapple Sauce:
- 1/2 cup pineapple juice
- 2 tablespoons honey
- 1 teaspoon chili flakes
- 1 teaspoon cornstarch mixed with 1 tablespoon water
- 1 tablespoon lemon juice
Instructions
- Preheat Oven: Preheat oven to 400°F (200°C).
- Prepare Sweet Potatoes: Arrange sweet potato rounds on a baking sheet. Brush with olive oil, season with salt and black pepper. Roast for 20–25 minutes until tender and slightly crispy, flipping halfway.
- Add Brie: Remove from oven and top each round with a piece of Brie. Return to oven for 3–5 minutes until cheese is melted.
- Make Pineapple Sauce: In a saucepan, combine pineapple juice, honey, and chili flakes. Simmer, then add cornstarch slurry and lemon juice. Cook until thickened.
- Assemble: Top sweet potato rounds with cranberries and walnuts. Drizzle with sweet chili pineapple sauce.
- Serve: Serve warm.
