  • 2 large sweet potatoes, sliced into 1/2-inch rounds

  • 1/2 cup walnuts, toasted

Sweet Chili Pineapple Sauce:

  • 1/2 cup pineapple juice
  • 2 tablespoons honey
  • 1 teaspoon chili flakes
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • 1 tablespoon lemon juice

Instructions

  1. Preheat Oven: Preheat oven to 400°F (200°C).
  2. Prepare Sweet Potatoes: Arrange sweet potato rounds on a baking sheet. Brush with olive oil, season with salt and black pepper. Roast for 20–25 minutes until tender and slightly crispy, flipping halfway.
  3. Add Brie: Remove from oven and top each round with a piece of Brie. Return to oven for 3–5 minutes until cheese is melted.
  4. Make Pineapple Sauce: In a saucepan, combine pineapple juice, honey, and chili flakes. Simmer, then add cornstarch slurry and lemon juice. Cook until thickened.
  5. Assemble: Top sweet potato rounds with cranberries and walnuts. Drizzle with sweet chili pineapple sauce.
  6. Serve: Serve warm.
