- 4 large russet potatoes
- 1 lb ground beef or chorizo
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup diced tomatoes
- 1/4 cup chopped green onions
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C). Pierce potatoes with a fork and bake for 45-50 minutes.
- In a skillet, cook ground beef with garlic powder, salt, and pepper until browned.
- Cut baked potatoes in half, scoop out some flesh, and mix with beef.
- Fill potatoes with the beef mixture, top with cheese, and bake for 5 more minutes.
- Garnish with sour cream, tomatoes, and green onions.
