Description

These loaded baked potatoes are packed with flavorful beef, melted cheese, and fresh toppings—an easy and satisfying meal!


Ingredients

  • 4 large russet potatoes
  • 1 lb ground beef or chorizo
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1 tsp garlic powder
  • 1/2 tsp salt

 

  • 1/2 tsp black pepper

Instructions

  • Preheat oven to 400°F (200°C). Pierce potatoes with a fork and bake for 45-50 minutes.
  • In a skillet, cook ground beef with garlic powder, salt, and pepper until browned.
  • Cut baked potatoes in half, scoop out some flesh, and mix with beef.
  • Fill potatoes with the beef mixture, top with cheese, and bake for 5 more minutes.

 

  • Garnish with sour cream, tomatoes, and green onions.

Notes

  • You can use turkey or black beans for a healthier version.
