Roasted Vegetables:
- 1 cup cherry tomatoes
- 1 cup zucchini, sliced
- 1 cup bell peppers, sliced
- 1/2 cup red onion, sliced
- 2 tbsp olive oil
- Salt and black pepper, to taste
- 1 tsp dried oregano
Additional Ingredients:
- 4 oz (115g) feta cheese block
- 1 cup cooked quinoa or rice
- 1/4 cup Kalamata olives, sliced
- 2 tbsp fresh parsley, chopped
Optional Dressing:
- 1 tbsp olive oil
- 1 tbsp lemon juice
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C).
- Prepare the vegetables: Toss cherry tomatoes, zucchini, bell peppers, and red onion with olive oil, salt, pepper, and oregano. Spread on a baking sheet.
- Bake: Place the feta block in the center of the vegetables and drizzle lightly with olive oil. Bake for 20–25 minutes until vegetables are tender and feta is soft.
- Assemble the bowls: Create a base of cooked quinoa or rice in bowls. Top with the roasted vegetables and feta.
- Garnish and serve: Garnish with olives and fresh parsley. Drizzle with the optional lemon-olive oil dressing before serving.
