For the Beef:
- 1 lb ground beef
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp chili flakes (optional for heat)

- 1 tbsp olive oil
For the Rice:
- 1 cup basmati or jasmine rice
- 2 cups chicken or vegetable broth
- 1 tbsp olive oil
- Salt, to taste
For the Bowl Toppings:
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 cup kalamata olives, halved
- 2 cups mixed greens
- 2 tbsp fresh parsley, chopped
For the Creamy Garlic Feta Sauce:
- 1/2 cup crumbled feta cheese
- 2 tbsp Greek yogurt
- 1 garlic clove, minced
- 1 tsp lemon juice
- 1 tbsp olive oil
- Pinch of salt
Instructions
- Cook the Rice: In a medium pot, heat olive oil and add rice; toast lightly 1–2 minutes. Add broth and salt, bring to a boil, then reduce heat to low. Cover and cook 15 minutes until rice is tender. Fluff with a fork.
- Cook the Beef: Heat olive oil in a skillet over medium heat. Sauté onion and garlic until translucent. Add ground beef, breaking it apart, and cook until browned. Stir in cumin, smoked paprika, chili flakes, salt, and pepper. Cook 2–3 more minutes.
- Make the Garlic Feta Sauce: Blend feta, Greek yogurt, minced garlic, lemon juice, olive oil, and a pinch of salt until smooth and creamy.
- Assemble the Bowls: Divide rice among serving bowls. Top with cooked beef, cherry tomatoes, cucumber, olives, and mixed greens. Drizzle with creamy garlic feta sauce and garnish with parsley.
- Serve: Serve immediately while warm, with extra feta sauce on the side if desired.
