  • 2 pita breads, warmed and cut into wedges
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 red onion, thinly sliced
  • 2 tbsp fresh parsley, chopped

For the Garlic Feta Sauce:

  • 1/2 cup Greek yogurt
  • 1/4 cup crumbled feta cheese
  • 1 clove garlic, grated
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Black pepper, to taste

Instructions

  1. Marinate chicken: In a bowl, combine olive oil, oregano, paprika, lemon zest and juice, garlic, salt, and pepper. Coat chicken and marinate 15–20 minutes.
  2. Cook chicken: Grill or pan-sear chicken over medium-high heat 5–6 minutes per side until golden and fully cooked. Rest briefly, then slice.
  3. Prepare garlic feta sauce: Blend Greek yogurt, feta, garlic, lemon juice, olive oil, and black pepper until smooth and creamy.
  4. Assemble bowls: Add pita wedges to bowls. Top with sliced chicken, cherry tomatoes, cucumber, red onion, and parsley.
  5. Finish: Drizzle generously with garlic feta sauce and serve immediately.
