For the Chicken:
- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp paprika
- Zest and juice of 1/2 lemon
- 2 cloves garlic, minced
- Salt and black pepper, to taste
For the Bowl:
- 2 pita breads, warmed and cut into wedges
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 red onion, thinly sliced
- 2 tbsp fresh parsley, chopped
For the Garlic Feta Sauce:
- 1/2 cup Greek yogurt
- 1/4 cup crumbled feta cheese
- 1 clove garlic, grated
- 1 tbsp lemon juice
- 1 tbsp olive oil
- Black pepper, to taste
Instructions
- Marinate chicken: In a bowl, combine olive oil, oregano, paprika, lemon zest and juice, garlic, salt, and pepper. Coat chicken and marinate 15–20 minutes.
- Cook chicken: Grill or pan-sear chicken over medium-high heat 5–6 minutes per side until golden and fully cooked. Rest briefly, then slice.
- Prepare garlic feta sauce: Blend Greek yogurt, feta, garlic, lemon juice, olive oil, and black pepper until smooth and creamy.
- Assemble bowls: Add pita wedges to bowls. Top with sliced chicken, cherry tomatoes, cucumber, red onion, and parsley.
- Finish: Drizzle generously with garlic feta sauce and serve immediately.
