  • 1 1/2 lbs (680g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 1/2 teaspoons dried oregano
  • 1 teaspoon smoked paprika
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper

For the Herb Feta Sauce

  • 1 cup crumbled feta cheese
  • 3/4 cup plain Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 small garlic clove, finely grated
  • 2 tablespoons chopped fresh parsley and/or dill
  • 1/4 teaspoon black pepper
  • 12 tablespoons water (to thin if needed)

For the Bowl Base

  • 2 cups cooked jasmine rice, basmati, or quinoa
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Pinch of salt

Instructions

  1. Marinate and Cook the Chicken – In a bowl, combine olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Toss chicken pieces in the marinade and let sit at least 30 minutes. Heat a skillet over medium-high heat. Cook chicken 6–8 minutes until golden and fully cooked.
  2. Prepare the Herb Feta Sauce – In a food processor or bowl, blend feta, Greek yogurt, olive oil, lemon juice, garlic, and chopped herbs. Add water gradually to reach a pourable consistency.
  3. Prepare the Bowl Base – Toss cooked rice or quinoa with olive oil, lemon juice, and a pinch of salt. Divide among serving bowls.
  4. Assemble the Pita Bowls – Top grains with cooked Mediterranean chicken. Add romaine, cucumber, tomatoes, red onion, and olives. Drizzle generously with herb feta sauce. Serve with warm pita slices and garnish with fresh parsley.
