  • 1/2 tsp black pepper
  • 1 tsp salt

Lemon Feta Sauce:

  • 200 g feta cheese
  • 1/2 cup plain Greek yogurt
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 small garlic clove, minced
  • Black pepper, to taste

Pita Bowls:

  • 4 pita breads, halved or torn into pieces
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup kalamata olives, sliced
  • Fresh parsley or dill, chopped
  • Optional: mixed greens

Instructions

  1. Marinate the Chicken In a bowl, combine olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken and coat well. Marinate for at least 30 minutes (up to 12 hours for deeper flavor).
  2. Cook the Chicken Grill over medium-high heat for 5–6 minutes per side until golden and cooked through, or pan-sear in a hot skillet. Rest for 5 minutes, then slice.
  3. Make the Lemon Feta Sauce Blend feta, Greek yogurt, olive oil, lemon juice, garlic, and black pepper in a food processor or blender until smooth. Adjust consistency with a splash of water if needed.
  4. Assemble the Pita Bowls Place pita pieces in bowls. Top with sliced chicken, cherry tomatoes, cucumber, red onion, olives, and mixed greens if using. Drizzle generously with lemon feta sauce and finish with fresh herbs.
