  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Juice of 1/2 lemon

Spicy Feta Sauce:

  • 1/2 cup crumbled feta cheese
  • 1/4 cup Greek yogurt
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp red chili flakes (adjust to taste)
  • 1 clove garlic, minced
  • 12 tbsp warm water (to thin if needed)

For the Bowl:

  • 2 pita breads, cut into wedges and lightly toasted
  • 2 cups cooked rice or quinoa
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp chopped fresh parsley
  • Optional: kalamata olives

Instructions

  1. Cook the Chicken: In a bowl, combine olive oil, garlic, oregano, paprika, cumin, salt, pepper, and lemon juice. Add cubed chicken and toss to coat evenly. Heat a skillet over medium-high heat. Cook chicken for 6–8 minutes, stirring occasionally, until golden and fully cooked through.
  2. Make the Spicy Feta Sauce: In a small bowl or blender, combine feta, Greek yogurt, olive oil, lemon juice, chili flakes, and garlic. Blend or mash until creamy and smooth. Add warm water a tablespoon at a time until desired drizzle consistency is reached.
  3. Assemble the Pita Bowl: Divide cooked rice or quinoa into bowls. Add cooked chicken over the base. Arrange cherry tomatoes, cucumber, and red onion around the bowl. Add toasted pita wedges on the side. Drizzle generously with spicy feta sauce. Sprinkle with fresh parsley and optional olives. Serve immediately.
