Mediterranean Chicken

  • 1 1/2 lb (700 g) boneless skinless chicken breasts or thighs
  • 3 tbsp olive oil
  • Zest and juice of 1 lemon
  • 3 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp ground cumin
  • Salt and black pepper, to taste

Spicy Feta Sauce

  • 1 cup Greek yogurt
  • 1/2 cup feta cheese, crumbled
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 small garlic clove, grated
  • 12 tsp chili paste, harissa, or sriracha (to taste)
  • Black pepper, to taste

Pita Bowls

  • 46 pita breads, toasted and cut into wedges
  • 2 cups cooked rice, quinoa, or couscous
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, sliced
  • Fresh parsley or dill, for garnish

Instructions

  1. Marinate the Chicken – In a bowl, mix olive oil, lemon zest and juice, garlic, oregano, paprika, cumin, salt, and pepper. Add chicken and coat well. Marinate for at least 20 minutes (up to 12 hours for deeper flavor).
  2. Cook the Chicken – Heat a skillet or grill pan over medium-high heat. Cook chicken 5–7 minutes per side until golden, slightly charred, and cooked through. Let rest, then slice.
  3. Make the Spicy Feta Sauce – In a blender or bowl, combine Greek yogurt, feta, olive oil, lemon juice, garlic, chili paste, and black pepper. Blend or whisk until smooth and creamy.
  4. Assemble the Bowls – Divide cooked grains between bowls. Top with sliced chicken, tomatoes, cucumber, red onion, olives, and pita wedges.
  5. Serve – Drizzle generously with spicy feta sauce and garnish with fresh herbs.
