For the Mediterranean Chicken

  • 1 1/2 lb (700 g) boneless skinless chicken breasts or thighs
  • 3 tbsp olive oil
  • Zest and juice of 1 lemon
  • 3 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp ground cumin
  • Salt and black pepper, to taste

For the Tzatziki Feta Sauce

  • 1 cup Greek yogurt
  • 1/2 cup crumbled feta cheese
  • 1/2 cucumber, grated and well-drained
  • 1 clove garlic, grated
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp fresh dill, chopped
  • Salt and black pepper, to taste

For the Bowl

  • 2 cups cooked rice or lemon rice
  • 23 pita breads, toasted and cut into wedges
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 small red onion, thinly sliced
  • 1/4 cup Kalamata olives, sliced
  • Fresh parsley or dill, chopped

Instructions

  1. Marinate the Chicken In a bowl, whisk olive oil, lemon zest and juice, garlic, oregano, paprika, cumin, salt, and pepper. Add chicken and toss to coat. Marinate for at least 20 minutes (up to overnight).
  2. Cook the Chicken Heat a skillet or grill pan over medium-high heat. Cook chicken 5–6 minutes per side until golden and cooked through. Rest briefly, then slice.
  3. Prepare the Tzatziki Feta Sauce In a bowl, combine Greek yogurt, feta, grated cucumber, garlic, lemon juice, olive oil, dill, salt, and pepper. Mix until smooth and creamy.
  4. Assemble the Bowls Divide rice among bowls. Add sliced chicken, pita wedges, tomatoes, cucumber, red onion, and olives.
  5. Finish & Serve Spoon generous amounts of tzatziki feta sauce over each bowl. Garnish with fresh herbs and serve immediately.
