For the Mediterranean Chicken
- 1 1/2 lb (700 g) boneless skinless chicken breasts or thighs
- 3 tbsp olive oil
- Zest and juice of 1 lemon
- 3 cloves garlic, minced
- 2 tsp dried oregano
- 1 tsp paprika
- 1/2 tsp ground cumin
- Salt and black pepper, to taste
For the Tzatziki Feta Sauce
- 1 cup Greek yogurt
- 1/2 cup crumbled feta cheese
- 1/2 cucumber, grated and well-drained
- 1 clove garlic, grated
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 tbsp fresh dill, chopped
- Salt and black pepper, to taste
For the Bowl
- 2 cups cooked rice or lemon rice
- 2–3 pita breads, toasted and cut into wedges
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 small red onion, thinly sliced
- 1/4 cup Kalamata olives, sliced
- Fresh parsley or dill, chopped
Instructions
- Marinate the Chicken In a bowl, whisk olive oil, lemon zest and juice, garlic, oregano, paprika, cumin, salt, and pepper. Add chicken and toss to coat. Marinate for at least 20 minutes (up to overnight).
- Cook the Chicken Heat a skillet or grill pan over medium-high heat. Cook chicken 5–6 minutes per side until golden and cooked through. Rest briefly, then slice.
- Prepare the Tzatziki Feta Sauce In a bowl, combine Greek yogurt, feta, grated cucumber, garlic, lemon juice, olive oil, dill, salt, and pepper. Mix until smooth and creamy.
- Assemble the Bowls Divide rice among bowls. Add sliced chicken, pita wedges, tomatoes, cucumber, red onion, and olives.
- Finish & Serve Spoon generous amounts of tzatziki feta sauce over each bowl. Garnish with fresh herbs and serve immediately.
