  • 1 small garlic clove, minced
  • Black pepper, to taste

For the Pita Bowls

  • 4 pita breads, halved or torn into pieces
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup kalamata olives, sliced
  • Fresh parsley or dill, chopped
  • Optional: mixed greens

Instructions

  1. Marinate the Chicken – In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken and coat well. Marinate at least 30 minutes, up to 12 hours for deeper flavor.
  2. Cook the Chicken – Grill or pan-sear chicken over medium-high heat for 5–6 minutes per side until golden and fully cooked. Rest for 5 minutes, then slice.
  3. Make the Whipped Feta Sauce – In a food processor or blender, combine feta, Greek yogurt, olive oil, lemon juice, garlic, and black pepper. Blend until smooth and creamy. Add a splash of water if needed to reach desired consistency.
  4. Assemble the Pita Bowls – Place pita pieces in bowls. Top with sliced chicken, cherry tomatoes, cucumber, red onion, olives, and mixed greens if using. Drizzle generously with whipped feta sauce and sprinkle fresh herbs.
