For the Mediterranean Chicken
- 1.5 lb (700 g) boneless skinless chicken thighs or breasts
- 3 tbsp olive oil
- 2 tbsp fresh lemon juice
- 3 cloves garlic, minced
- 2 tsp dried oregano
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 1 tsp salt
For the Whipped Feta Sauce
- 200 g feta cheese
- 1/2 cup plain Greek yogurt
- 2 tbsp olive oil
- 1 tbsp fresh lemon juice
- 1 small garlic clove, minced
- Black pepper, to taste
For the Pita Bowls
- 4 pita breads, halved or torn into pieces
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 red onion, thinly sliced
- 1/2 cup kalamata olives, sliced
- Fresh parsley or dill, chopped
- Optional: mixed greens
Instructions
- Marinate the Chicken – In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken and coat well. Marinate at least 30 minutes, up to 12 hours for deeper flavor.
- Cook the Chicken – Grill or pan-sear chicken over medium-high heat for 5–6 minutes per side until golden and fully cooked. Rest for 5 minutes, then slice.
- Make the Whipped Feta Sauce – In a food processor or blender, combine feta, Greek yogurt, olive oil, lemon juice, garlic, and black pepper. Blend until smooth and creamy. Add a splash of water if needed to reach desired consistency.
- Assemble the Pita Bowls – Place pita pieces in bowls. Top with sliced chicken, cherry tomatoes, cucumber, red onion, olives, and mixed greens if using. Drizzle generously with whipped feta sauce and sprinkle fresh herbs.
