  • 1/2 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 cup Kalamata olives
  • 1/2 cup crumbled feta cheese
  • 1 cup warm pita bread, cut into wedges
  • Fresh parsley, chopped
  • Lemon wedges for serving

Instructions

  1. Marinate the Chicken: In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Add chicken pieces and toss to coat well. Cover and marinate for at least 30 minutes (up to 4 hours for deeper flavor).
  2. Skewer the Chicken: Thread marinated chicken onto soaked wooden or metal skewers. Leave a little space between pieces for even cooking.
  3. Grill the Skewers: Preheat grill or grill pan to medium-high heat. Cook skewers 10–12 minutes, turning occasionally, until nicely charred and internal temperature reaches 165°F (74°C).
  4. Prepare the Mezze Board: Arrange hummus, tzatziki, tomatoes, cucumber, olives, feta, and pita on a large platter or board. Sprinkle with fresh parsley.
