  • 1/2 cup cherry tomatoes, halved
  • 2 tbsp red onion, finely diced
  • 2 tbsp chopped fresh parsley
  • 2 tbsp crumbled feta cheese

For the Yogurt Dressing:

  • 1/2 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • 1 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Bake the Sweet Potatoes: Preheat oven to 400°F (200°C). Rub sweet potatoes with olive oil, salt, and pepper. Bake 40–50 minutes until tender when pierced with a fork.
  2. Prepare the Chickpea Filling: In a skillet, heat olive oil over medium heat. Add chickpeas, smoked paprika, cumin, garlic powder, salt, and pepper. Cook 5–7 minutes until chickpeas are slightly crispy. Remove from heat and let cool slightly.
  3. Mix the Mediterranean Salad: In a bowl, combine cooked chickpeas, cucumber, cherry tomatoes, red onion, parsley, and feta cheese.
  4. Prepare the Yogurt Dressing: Whisk together Greek yogurt, lemon juice, garlic, olive oil, salt, and pepper.
